Caribbean Chicken Curry
This mild chicken curry is easy to prepare and appeals to the most avid curry lovers.... Suitable for children, the mild exotic flavour is a treat in any household.
Ingredients
- 2 heaped tablespoons Curry Paste
- 4 cups of Water
- Salt to taste
- 4 chicken breasts cut into cubes and washed with half fresh lemon
- 4 peeled potatoes cut into cubes
- 2 large carrots cut into cubes
- 1 large onion diced
- 1 clove of garlic
Directions
- Dilute the curry paste with four cups of water to two heaped tablespoons of curry paste in a sauce pan
- Add chicken pieces to curry sauce
- Simmer and cook. Add more water so the chicken can cook
- Add salt to taste
- When chicken has cooked, add potato,carrots, onions, and garlic
- let the vegetables disintegrate to thicken the curry sauce

Hot Chicken Wings
Bad Boy Pepper Sauce – serving suggestion
Serves 4
Ingredients
- 10 pieces of chicken wings
- 2 tsp salt
- 1 ts. Garlic powder
- 1 tbsp. mixed herbs
- 4 tbsp. Tomato sauce
- Dash of Worcester sauce
- 1 tsp. Bad Boy Pepper Sauce
Directions
- Season chicken wings with salt, mixed herbs, and garlic powder
- Marinate for 30 minutes
- Pre-heat oven to 180oC
- Bake chicken wings for 20 minutes
- Mix tomato sauce, worcester sauce, and Bad Boy Pepper Sauce.
- Coat chicken wings with sauce and return to oven to bake until brown
- Serve as an appetizer

Jerk Irish Sausage
Jamaican Jerk - serving suggestion
Serves 4
Ingredients
- 8 links of pork sausage
- 4 tablespoons of 'Taste of the Caribbean' Jamaican Jerk Sauce
Directions
- Pre-heat oven to 180oC
- Cover sausage with a generous helping of jerk sauce
- Bake in oven for 15 – 20 minutes or until brown
- Cut into bite size pieces and serve with toothpicks as an appetiser

Rasta Pasta Mash
Rasta Pasta Sauce – serving suggestion

Jar of sauce serves 2
Ingredients
- 1lb potato
- 1 tsp salt
- Rasta Pasta sauce
Directions
- Peel 1 lb of potatoes (4 large potatoes) and cut into cubes
- Boil until tender with 1 tsp of salt
- Mash potatoes and put onto 2 plates
- Gently heat Rasta Pasta sauce in a saucepan for 2 minutes until warm
- Scoop sauce onto mashed potatoes and serve.
